Mousaka
1&1/2 lbs gr beef
1 med onion chopped
3 med potatoes
2 T chopped parsley
1 tsp salt
1/4 tsp pepper
1/8 tsp nutmeg
1/8 tsp cinnamon
1 8oz can tomato sauce
1/4 C tomato juice
1 med eggplant
6 eggs
3/4 C milk
1/2 tsp salt
1/3 C grated Parmesan cheese
brown meat and onion & drain
add parsley, spices, tomato sauce/juice
heat to boil
simmer uncovered 5 minutes
cut egg plant into 1/2 inch slices - don't peel
peel potatoes and cut into 1/4 slices
in baking dish layer meat 1st, then egg plant and potatoes
repeat layers
cover and bake 40 minutes - until potatoes are done
beat eggs, milk and salt
pour over hot casserole and top with cheese
bake until custard is set - 10-15 minutes
cool 10 minutes
