Creole Jambalaya
1 lb bacon
4 Italian Sausages
1 med onion
2 cloves garlic crushed
1 green pepper
1&1/2 C raw rice
1/2 lb ham or chicken
2&1/2 C canned tomatos drained and chopped
1/2 C liquid from canned tomatos
2 C chicken stock
1 tsp salt
1/2 tsp thyme
2 Tbsp chopped parsley
1/2 tsp cayenne pepper
1 lb raw shrimp
fry bacon until fat is transparent
fry sausage with bacon until done
drain all but 2 Tbsp fat
add onion and sauté until transparent
add garlic and green pepper and fry until soft
add rice and sauté for 2-3 minutes
add ham/chicken, tomatos, liquids, salt, thyme, parsley and cayenne
cover and bring to boil
bake 350 degrees for 20 minutes
add shrimp
cover and cook 10-15 minutes
serve when rice is tender and moisture absorbed
